Nothing says put together parent like a last-minute banana cake that tastes like you've been planning it all week.
Grab a box of gluten-free banana bread packet mix from Woolworths in your pantry, save those black bananas from the compost, and you’re halfway to hero status. This recipe is perfect for emergency school lunches, unexpected guests, or when you just need something sweet and quick in under 45 minutes.
Ingredients
Base:
1 packet gluten-free banana cake mix (Woolworths brand)
2 ripe bananas (the blacker, the better)
2 eggs
1/2 cup puréed apple (as a swap for oil)
Optional extras (our vote is a hard yes):
1 tbsp cinnamon
1 tbsp cacao powder
1 handful of chocolate chips
1 tbps brown sugar (for sprinkling on top before baking)
Icing:
1/2 cup icing sugar
1 tub cream cheese (approx. 225g)
1 tbsp butter
2 tbsp peanut butter
Dash of vanilla extract
Method

Preheat your oven as per the instructions on the packet mix. Line a loaf tin or cake pan.

Mash the bananas until smooth and moody-looking. Combine with eggs and apple purée.

Add the packet mix and stir until combined. Fold in the cinnamon, cacao, and choc chips if using.

Pour into pan, smooth out the top, and sprinkle with a little brown sugar for bonus crunch and sparkle.

Bake according to the packet instructions, or until a skewer comes out mostly clean (gooey is good).

Cool completely before icing or risk an icing landslide (still delicious, though).
