Healthy Snickers Bites

The snack we’ve been making for 9 years… and still aren’t bored of.

These little bites are rich, chewy, creamy, and chocolatey (everything you want in a treat). Naturally sweet from Medjool dates, layered with Frankly Raw peanut butter, and wrapped in a dark chocolate shell.

They’re perfect for lunchboxes, after-dinner sweet cravings, or bringing to gatherings and yes, you can level them up with marshmallows or raspberries if you’re feeling chaotic. 

Ingredients (Makes 12 bites)

12 Medjool dates, soaked (if firm) and pitted
12 teaspoons peanut butter (about 1 tsp per date)
1 cup dark chocolate chips

Optional add-ins:

Mini marshmallows
Chopped raspberries
A sprinkle of sea salt

Method

1. Melt the chocolate: Place the dark chocolate chips in a microwave-safe bowl.
Heat in 30-second intervals, stirring between each round, until smooth and glossy. Set aside.

2. Build your layers: Using an ice cube tray, spoon a small layer of melted chocolate into each cube space. Place one pitted date on top. Add 1 teaspoon of peanut butter into each date. Spoon more melted chocolate over the top to fully cover.

Tip: Gently tap or shake the tray to help the chocolate settle and smooth out the tops.

3. Chill to set: Place the tray in the fridge for 1–2 hours, or until fully set and firm.

4. Pop & enjoy: Remove from the tray and try not to eat three immediately. (No promises.)

 

Notes

  • Store in the fridge for the best texture.

  • Add marshmallows or raspberries inside the date before topping with chocolate for a fun twist.

  • Sprinkle flaky sea salt on top before chilling for that sweet-salty magic.
