Mona’s Peanut Butter Banana Bread:
Ingredients
3-4 ripe bananas, mashed, plus 1 regular banana for the top
5 eggs
3/4 cup coconut flour
1/3 cup sugar
2 tsp baking powder
1 tsp cinnamon
Chopped walnuts
2 generous tbsp of Frankly Raw Peanut Butter
Method
1. Preheat oven to 150 degrees Celsius
2. Whisk eggs lightly and add bananas to a bowl - mix well
3. Combine coconut flour, sugar, baking powder into bowl. Mix until combined.
4. Add as much Frankly Raw Peanut Butter as you desire - mix through
5. Pour into a lined loaf pan, sprinkle with walnuts.
6. Slice a regular banana lengthwise down the middle and place on top, lightly pressing into the mixture.
7. Bake for 1 hour or until the inserted skewer comes out clean.
8. Leave for 10 mins to cool before slicing and serving with more Frankly Raw PB!
