Single Serve PB Cheesecake

When the cheesecake craving hits but baking a whole one feels like overkill, this peanut butter protein cheesecake in a glass is your new go-to. Quick, no-bake, and made with simple ingredients, it’s creamy, chocolatey, and portioned perfectly for one. Dessert, snack, or even breakfast — we don’t judge.

INGREDIENTS

Any biscuit (we used a scotch finger)
1 cup Greek yoghurt
1 scoop protein powder
1 tbsp peanut butter
1 tbsp cacao powder
1 tsp sweetener (optional)

METHOD

1. Crush biscuit and add to a bowl (save 1/4 for topping)
2. In a separate bowl, stir together yogurt, protein powder, and peanut butter until combined
3. Spoon the yoghurt layer over the crushed biscuit
4. In a small bowl, mix cacao powder (and sweetener if using) with water until it has a SLIGHTLY running consistency (you don’t want it too runny!)
5. Pour the chocolate sauce over the yoghurt layer
6. Add fresh fruit (we used blueberries and strawberries)
7. Top with the remaining crushed biscuit
8. Serve & enjoy any time of day (like we said, we don't judge)
