Mona’s Peanut Butter Banana Bread:
- 3-4 ripe bananas, mashed, plus1 regular banana
- 5 eggs
- 3/4 cup coconut flour
- 1/3 cup sugar
- 2 tsp baking powder
- 1 tsp cinnamon
- Chopped walnuts
- 2 generous tbsp of Frankly Raw Peanut Butter
- Preheat oven to 150 degrees Celsius
- Whisk eggs lightly and add bananas into a bowl - mix well
- Combine coconut flour, sugar, baking powder into bowl. Mix until combined.
- Add as much Frankly Raw Peanut Butter as you desire - mix through
- Pour into lined loaf pan, sprinkle with walnuts.
- Slice regular banana lengthways down the middle and place on top, lightly pressing into the mixture.
- Bake for 1 hour or until the inserted skewer comes out clean.
- Leave for 10 mins to cool before slicing and serving with more Frankly Raw PB!
